John Shields is co-owner, co-founder and executive chef of Smyth in Chicago. After working at Charlie Trotter's and as an opening sous chef at Alinea, he and Karen Urie Shields developed Town House and Riverstead Inn in Virginia before returning to Chicago to open Smyth and The Loyalist in 2016.
