Spirits production often rewards the habits learned in research work: precision, patience, and repeatable method. Ian Cutler came into the field as a research facility operator, and that early discipline shows in the way his work is described — measured, exacting, and built around close control at each stage. Since 2013, he has been founder and distiller of Cutler's Artisan Spirits, where the craft sits with him across the process rather than at its end. Hospitality adds a different register without changing the underlying logic of the work. In 2025, Ian Cutler expanded into that space as proprietor of Cutler's Public House and Restaurant, extending the same attention to detail into a setting built for service and gathering. The distillery and the public house sit as complementary forms: one centered on production, the other on the social use of the drink, both rooted in the same practical understanding of how people meet around a glass.

In Their Words “The term ‘pub’ harkens back to ‘public house’ originally, which was a gathering place for the townspeople to get together and have a drink and socialize.” The public house, as Cutler uses the term, is defined by function before style: a room for gathering, drinking, and social exchange. That reading places the pub in its older civic role, less as a concept to brand than as a shared space with a clear social purpose. “They didn’t have the Internets and the TikToks and the Facebooks to communicate with. The public house was a means of in-person communication.” Cutler frames the public house as a practical answer to the need for face-to-face contact. The emphasis is on direct exchange, on the value of meeting in person rather than through a feed, and on the pub as a working social instrument rather than a decorative one.
