The Path

The apprenticeship here started in 2004, when Schmidt began as a part-time distiller at Tin Shed Distilling Co / Iniquity Single Malt Whisky. That kind of entry matters in distilling: it places the work inside the daily routine of production, where timing, repetition, and attention build skill. Schmidt’s route from part-time distiller to co-owner and distiller kept him close to that rhythm. The result is a practice shaped by direct handling and by the practical judgment that comes from working every stage of the process.

The Work Today

Based in Adelaide, Australia, with Tin Shed Distilling Co also associated with Welland, South Australia, Schmidt’s operation is set up around control of the process. As he puts it, “Production is totally in-house, from mashing to bottling and shipping.” In trade terms, that means the work is kept under one roof and the chain of responsibility stays tight. His own description of the business is just as plain: “We are a lean and green operation.” It is a concise way of stating a model built around efficiency, restraint, and accountability. That structure still leaves room for range. Schmidt is known to enjoy experimentation, particularly with regional flavours from South Australia, bringing local reference points into the Iniquity line. The point is not ornament but variation within a defined house style: spirits that stay grounded in production discipline while making space for regional expression.

Ian's signature wines include Iniquity Single Malt Whisky, Iniquity Batch 016, Iniquity Gold Batch 005, Iniquity Experimental Batch, and Iniquity Batch 1 Australian Single Malt Whisky. Each release sits within the same production framework, while the batch names point to the line’s mix of core bottling, limited runs, and experimental expressions.
