It is a working arrangement, one that keeps decisions close to the still house, the warehouse, the bottling bench, and the person responsible for the spirit that leaves them.

Schmidt began at Tin Shed in 2004 as a part-time distiller, a route that placed him inside production before ownership became part of the title. The apprenticeship here was practical rather than ceremonial: repeated mashes, cuts made by attention, the small corrections that come from time on the tools. His present role reads less like a move away from the work than a longer hold on it. Co-owner and distiller are joined titles at Iniquity, and the authority comes from direct handling, not distance.

A lean house with the process held close

The method at Iniquity is built around custody. Schmidt’s line, “We are a lean and green operation,” gives the house its operating vocabulary: restraint, efficiency, and a chain of accountability that does not hand off the work too early. From mashing through bottling and shipping, the spirit remains inside the same discipline. That matters in whisky because each stage carries forward into the next. A mash is not separate from the fermentation that follows it; a cut is not separate from the cask or the label that eventually carries the batch name.

The still house before the tasting room

The counter, if there is one, is secondary to the bench. What defines the atmosphere is the compactness of the system: mashing, distilling, bottling, and dispatch held close enough that the maker can feel the consequence of each decision.

That closeness gives Iniquity its quiet force. There is no need to inflate the room around it. A lean operation has its own texture: fewer layers, tighter feedback, a shorter path between the wash and the finished bottle.
