Ivan Ralston Bielawski is a Brazilian chef born in São Paulo in 1985 who founded the two Michelin-starred restaurant Tuju in 2014. He trained at prestigious international establishments including Mugaritz and El Celler de Can Roca in Spain, and Ryugin in Tokyo, before returning to São Paulo to establish his contemporary Brazilian fine dining concept. His approach emphasizes seasonal Brazilian produce, indigenous ingredients, and innovative techniques, with Tuju ranking No. 16 in Latin America's 50 Best Restaurants 2024.
