Hawthorne matters here as a place where repeat service, regular customers, and community contact are part of the job, and Krause has said as much: “Just getting to meet a lot of new people, being apart of this community on Hawthorne, and I really love cooking, so I get to cook all day and that’s really awesome.” That mix of expansion and routine defines the operation. For Krause, the restaurant is both a business to build and a daily kitchen practice.
