    i. Biography

    The Place Place is carried through Jacob Parton’s wines by selection before it is carried by cellar handling. The 2023 Great Western Riesling is the clearest example: built from multiple sites across the Great Western GI, it avoids the pull of a single block and instead lets the region read as a composite. Long, cold, slow stainless-steel ferments keep that frame intact, so the wine lands as a regional blend with detail coming from the fruit rather than from cellar weight. The same regional logic underpins the 2021 Great Western Cabernet Sauvignon. It is also assembled from multiple sites in the Great Western region, so the wine’s shape comes from breadth of source as much as from any one parcel. In both wines, place is not declared outright; it is built through selection, then held in balance by the way Parton works the material.

    The Method Parton’s method is built on long, cool fermentations, careful parcel selection and barrel use for texture or complexity. The aim is direct: freshness, brightness and fruit-forward balance. Those priorities sit across the range, with temperature, solids, oak format and time all doing practical work in the cellar. The 2023 Great Western Chardonnay shows that approach in close detail. It is fermented in barrel, inoculated with two yeast strains, and left on solids for up to nine months before racking, filtering and bottling. The sequence is measured and hands-on, with contact and time used to build shape before release. For the 2023 Great Western Riesling, the method moves away from barrel and into steel. Long, cold, slow stainless-steel ferments keep the focus on controlled fermentation and on fruit drawn from multiple sites across the GI, preserving clarity and lift. The 2021 Great Western Cabernet Sauvignon follows a different set of materials again. It is fermented in open-top fermenters, then aged in small and large-format oak for up to 14 months, using both vessel and oak scale as part of the wine’s construction. The result is structure by way of process, not force.

    The Range Each release carries its own technical signature rather than repeating a single cellar template, so the range reads as varied, deliberate and purpose-led. The Blanc de Noir Cuvée is the most unusual of the named wines: a white cuvée made from 100% Shiraz from the estate vineyard at Sugarloaf, with bubbles added. Here, Shiraz is moved into a different register, taken away from red-wine expectation and shaped into a pale sparkling format.
