Jacques Boissenot

The work started in study and analysis: at Institut d'Oenologie, Bordeaux University in Bordeaux, Jacques Boissenot trained in the technical language of wine before moving into lab work in Bergerac until 1974. That early sequence set the terms of his practice: precision, observation, and the ability to read wine through method as much as through tasting. In 1974, he opened a lab at Bordeaux university's Institut d'Oenologie in Pauillac, putting his work closer to the Médoc and to the practical side of production.

He later served as wine consultant for Château Pichon-Longueville Comtesse de Lalande (Pauillac, France) from 1978 to 1990, where laboratory rigor and cellar judgment were part of the same job. That combination shows the range of the trade: analysis on one side, and direct work with wine in barrel, tank, and bottle on the other.

The role follows a career built around lab discipline, cellar judgment, and assemblage, with each part supporting the next. His work sits where tasting and calculation meet, and where the sample only matters in relation to the finished blend. His language stays technical because the job requires it. On the value of certain tools in blending work, he has said, "their value in optimising the selection of our lots in order to make the best possible assemblage [blend] is very clear." The point is plain: selection, comparison, and the final assemblage matter more than display.
