    Jaime Rodríguez is a Colombian chef and owner of Celele in Cartagena, where he serves as the owner and creative development and research chef. Celele’s concept is built around Proyecto Caribe Lab, a research initiative focused on Colombia’s Caribbean biodiversity, native ingredients, and ancestral culinary traditions. In 2025, Celele was named winner of The World’s 50 Best Restaurants’ Sustainable Restaurant Award, and the restaurant is currently listed among Latin America’s top restaurants.
