i. Biography
Jared Himstedt is the head distiller and co-founder of Balcones Distilling in Waco, Texas, where he has been involved since the distillery’s inception in 2008. He has also served as a vice president of the American Single Malt Whiskey Commission, reflecting his role in shaping the American single malt category. Earlier in his career, he was a home brewer and managed Dancing Bear Pub, a craft beer bar in Waco, before moving into distilling.
