At Calcareous Vineyard in Paso Robles, the work of a head winemaker comes down to two things at once: technical control and a disciplined read on site. Jason Joyce stepped into that role in 2010, and his cellar philosophy is built around giving the vineyard room to speak. In his words, he is given complete freedom in the cellar to bring the fruit from vine to glass in whatever manner produces the best possible expression of the place. The route into wine was shaped by science, agriculture, and hands-on harvest work rather than a single turn. California Polytechnic State University, San Luis Obispo provided the educational base, while work as a synthetic chemist in the San Francisco biotech industry in San Francisco, California, brought analytical rigor into the picture. In 2007, harvest cellar hand work in the Paso Robles wine industry in Paso Robles, California, moved Joyce closer to the practical tempo of grape intake, cellar work, and seasonal decision-making. A later role as head winemaker at a boutique winery on Paso Robles' west side in Paso Robles, California, extended that progression toward the broader responsibilities he would later carry at Calcareous Vineyard. Today, Jason is winemaker of Calcareous Vineyard and winemaker of Slope and Intercept (since 2013), with both roles still grounded in Paso Robles.

Where They Are Now

At Calcareous Vineyard, the central task is to work from estate fruit without flattening what the vineyard already provides. Joyce keeps the emphasis on the site itself, and on the geology that frames it. That limestone reference is the operative fact behind the present cellar work: the wine is built to reflect what the vineyard already gives, and the cellar is used to preserve rather than overwrite that character. In practice, that means the estate remains the main source of identity, with the finished wines shaped by how Joyce handles the fruit rather than by any attempt to force it away from place.

Signature

Jason's signature wines include Calcareous Vineyard wines, Calcareous Viognier, and Slope and Intercept. Together, they point to the same working method: estate-based wines from Calcareous Vineyard, the specific expression carried by Calcareous Viognier, and the continuing line represented by Slope and Intercept. The thread through all three is place-conscious winemaking, with Paso Robles providing the frame and the cellar determining how the fruit is carried through to the finished wine.
