i. Biography
Jaume Subirós Jordà is the owner and chef of El Motel at Hotel Empordà in Figueres, Catalonia, a restaurant widely cited as a landmark of modern Catalan cuisine. He began working at El Motel in 1961 as an eleven-year-old bellboy, later taking over after the death of Josep Mercader and preserving the restaurant’s new-cuisine legacy. He is still running El Motel and also associated with the Almadrava Park Hotel restaurant in Roses.
