The Climb
Pastry work runs on precision, stamina, and timing, and Javier Mercado built that discipline across kitchens, hotels, colleges, and dining rooms that each asked for the same exacting standard in a different register. Beginning in Orocovis, Puerto Rico, and moving through roles that stretched from night baking to executive pastry leadership, he accumulated range the hard way: station by station, service by service, with teaching and ownership later becoming part of the same practice. Johnson & Wales University gave Javier Mercado a formal base, but the weight of his career came from the line and the classroom. As Pastry Cook / Night Baker at Loews Ventana Canyon Resort Hotel in Tucson, Arizona, he worked the hours that define bakery rhythm. At Westin Carambola Beach Hotel Resort & Spa in St. Croix, U.S. Virgin Islands, he served as Executive Pastry Chef, and that role marked a shift from execution to responsibility. He then moved through the Ritz-Carlton Hotel in McLean, Virginia, and Albert Uster Imports in Gaithersburg, Maryland, carrying pastry production into settings where technical control had to hold up under different demands. Instruction became a parallel track rather than a detour. Javier Mercado served as Senior Pastry Chef Instructor at Westminster Kingsway College in Westminster, London, England, then as Pastry Chef Instructor and Senior Trainer at Le Cordon Bleu International in London, England and Le Cordon Bleu International in Seoul, Korea. The work required the same craft, but in classrooms where technique had to be repeatable, readable, and transferable across contexts. His leadership work kept moving between hotel pastry programs, culinary schools, and restaurant operations. At The Landmark London Hotel in London, England, he was Head Pastry Chef, and at César Ritz Colleges, Culinary Arts Academy in Luzern, Switzerland, he served as Pastry Chef Instructor. Later roles as Restaurant Owner/operator at Tiki Taka Mexican Restaurant (2020–2022) and La Cuisine Hafnatörg (2022–2025), along with head chef at Center Hotels Jörgensen kitchen (2017–2020), Chef de partie at Tapas barinn Iceland (2016–2017), sous chef at Piccolo Mondo Malmö (2013–2016), Chef de partie / part time at NOMA in Denmark (2014–2015), and Chef de partie at La Cucina Italiana (2014), show a chef working across formats without losing the technical base that pastry requires.
Today
Since 2022, Javier Mercado has served as Associate Professor—baking and Pastry Arts at the Culinary Institute of America, Greystone in St. Helena, California. In that classroom, pastry is treated as both technique and structure for creative expression, with the emphasis on exacting method rather than ornament.
