i. Biography
Javier Muñoz Soto is the chef of La Carboná in Jerez de la Frontera, where he has built a cuisine centered on Vinos de Jerez and is widely known as the “Chef del Sherry.” He returned permanently to Jerez in 2010 and helped shape La Carboná into its current form in the former bodega setting.
