Since 1991, Jean-Christophe Bott has been the winemaker of Domaine Bott-Geyl, guiding the house’s wines with a steady hand and a precise, enduring vision. From the outset, the work has rested on a simple premise: vineyard and cellar are part of the same conversation, and that conversation only holds if each intervention stays in scale with the wine.

Where They Are Now

Since 1993, Bott has continued as winemaker at the domaine in Beblenheim. The practical goal is clear: let each terroir express its own character in the finished wines. That depends on harvest precision and on a cellar discipline that protects nuance instead of flattening it. Reduced yields form part of that discipline, concentrating the fruit before it reaches the press. Hand harvesting and vineyard sorting move selection into the vineyard itself, where the work begins under careful eyes and careful hands. Whole-cluster pressing keeps that handling restrained as fermentation starts its slow work. The sequence is deliberate, with each step set up to preserve clarity, tension, and identity. The line Bott uses about time and memory points to the logic behind the cellar work. Long fermentation and fine lees aging are not treated as embellishment; they are ways of keeping duration visible in the wine. The result carries elapsed time as structure rather than weight, with a layered presence shaped by patience and discipline.

Jean-Christophe's signature wines include Sonnenglanz Gewürztraminer Grand Cru, Gewürztraminer Grand Cru, Métiss, Les Éléments Gewürztraminer, and Riesling Grand Cru Schoenenbourg.
