i. Biography
The Path
Confectionery training in France still runs through school, hotel apprenticeship, and long production discipline. In 1974, Jean-Paul Hévin entered the Technical School in Laval, Robert-Buron, where the base was pastry and sugar work rather than brand language. In 1975, the Intercontinental Hotel placed that training inside service as an Apprentice Confectioner, with technique and presentation learned against professional volume. Hotel pastry work demands repetition, finish, and control across changing menus. From 1976 to 1988, Jean-Paul Hévin worked as Pastry Chef at the Nikko Hotel, a span long enough to make refinement part of the job rather than an occasional exercise. In 1988, the founding of Jean-Paul Hévin moved that discipline into an independent chocolate brand. “It’s really good in chocolate mousse.” Jean-Paul has said.
The Practice Today
Chocolate at Jean-Paul Hévin is built as a branded craft practice with shops in Paris, Japan, Taiwan, and Hong Kong. The work is known for delicate ganaches, crispy pralines, and ingredient use that includes tonka beans and matcha. The register is controlled: confectionery technique, chocolate structure, and flavor selection carried through an international retail format.
Signature
Signature chocolates include 70% Yaoundé dark chocolate, Cameroun milk bar, and Cameroon chocolate log.
Honors
The Meilleur Ouvrier de France title remains one of the trade’s clearest markers of tested technical standing. Jean-Paul Hévin received it in 1986, placing his confectionery and chocolate work within that competitive French craft lineage.
