Jean-Louis Palladin

Jean-Louis Palladin (1946–2001) was a French-born chef from Condom, Gers, who earned two Michelin stars for La Table des Cordeliers in 1974 at age 28, becoming the youngest chef then to receive that distinction. He moved to Washington, D.C. in 1979 to open Jean-Louis at the Watergate, later moved to Las Vegas to open Napa at the Rio, and is widely credited with helping introduce French nouvelle cuisine and farm-to-table sourcing to American fine dining. He died in McLean, Virginia, in November 2001 after battling lung cancer.
