The Climb
Training at the University of Texas at Austin gave Jeff Balfour a base, but the work of building a point of view happened on the line in San Antonio. At Hotel Valencia Riverwalk in San Antonio, Texas (from 2002), he stepped into a hotel kitchen where pacing, consistency, and a sense of place had to hold together service after service. At Citrus Restaurant in San Antonio, Texas (until 2015), that approach kept tightening: familiar Texas flavors, handled with more control and a cleaner finish. Since 2015, the scope widened through Southerleigh Hospitality Group (since 2015), where he has served as co-founder and Executive Chef, alongside his role as Executive Chef of Southerleigh Fine Food & Brewery (since 2015). The throughline is regional cooking with discipline—less about reinvention than about carrying Gulf Coast material into a larger hospitality format without losing its edge.
Today
At Southerleigh Hospitality Group, Balfour’s cooking sits at the point where comfort food has to meet technique. Gulf Coast ingredients and Texas table cues are the foundation, but the plates are built with enough precision to keep them from feeling loose or nostalgic. Fried chicken, shrimp, Gulf seafood, and burgers all show up as recognizable forms, but the execution aims for clarity, balance, and a direct line to the diner. That is where the work lands best: in food that knows what it is. Balfour does not seem interested in novelty as a default setting.
