The Path
From there, the line runs through kitchens and pastry rooms that each asked for a different kind of control. At Charlie Trotter’s, she led pastry programs in an environment defined by exacting standards; at Blackbird, the work sat closer to contemporary restraint; at Bittersweet Bakery, production shaped the pace; at Emeril’s in New Orleans, the craft met a city with its own strong culinary pulse; and at Tom Colicchio’s Craft in New York City and Marc Forgione in New York City, she continued to lead pastry programs in demanding rooms. The progression is less about ornament than accumulation: each stop adding another layer of method, discipline, and point of view. Advanced pastry education became part of that same line when Jenny McCoy served as co-chair, center for Advanced Pastry Studies at Institute of Culinary Education in New York City.
