Before Jesse Griffiths became chef and co-owner of Dai Due in Austin, Texas, his foundation was laid in Denton, where he was born and raised. That early Texas grounding later expanded into hunting, which he took up as an adult and folded into the way he cooks, teaches, and thinks about food.
