Hospitality trained Joe McCanta in three disciplines that still shape the work: bar service, wine service, and brand building. As bartender at New York in New York, he worked in a tempo that rewards speed without losing control. As sommelier at Counter in New York City, he moved into service framed by bottles, pairings, and the precision of sequence. He then worked for Saf raw food restaurants at Saf raw food restaurants, where the register shifted again toward freshness, restraint, and a kitchen logic built on cleanliness of intent. In 2008–2008, he Opened Saf Restaurant and Bar at Saf Restaurant and Bar in London, turning those separate skills into a room with a point of view. The role was not only about service, but about setting the tone of the operation itself. He later became UK Ambassador at GREY GOOSE, then Global Ambassador at GREY GOOSE, with the brand becoming the platform for a wider public-facing practice. Today, Joe is Global Head of Brand Experience of GREY GOOSE, responsible for how the brand is encountered and remembered.

Where They Are Now

Brand Experience now sits at the center of the work. The route to that title runs through bartending, wine service, restaurant operations, and ambassador roles, so the logic is cumulative rather than abrupt. Joe McCanta’s career has built in layers: timing from the bar, calibration from the cellar, atmosphere from the room, and brand stewardship from the ambassador work that followed.

In Their Words “I hate measuring things. I like doing things by touch and sight.” That preference points to a hands-on method. It favors judgment in the moment over procedure for its own sake, and treats touch and observation as working tools rather than decorative language. “A simple vodka on the rocks, preferably GREY GOOSE.” The answer is plain, and the preference is clear. It reads as a choice for directness, with no extra garnish needed to make the point.
