John Blazon

Career John Blazon’s work in wine and service was assembled through the operating realities of hotels, kitchens, and dining rooms rather than through a single clean arc. The earliest training came on the floor and in back-of-house service, where speed, discipline, and attention to detail are nonnegotiable. At the Dunfey Atlanta Hotel, he worked as assistant executive steward and learned the standards of the trade alongside master chef Tom Catherall. He then moved into front-of-house service at the Pavilion Tower hotel, where the craft shifts from operations to guest-facing precision. After opening another hotel and restaurant project, Blazon settled into wine and table service, the paired disciplines that came to define his career.

The Climb

Training at University of Massachusetts Amherst gave John Blazon a formal base for the kind of polish hospitality demands. The rest was built in stages: early mornings, long shifts, and the repetition that turns procedures into habits. Stewarding, front-of-house service, hotel operations, and wine service each added another layer to his understanding of how a room works and what guests carry away from it.
