Stages at River Café in London and Le Jardin des Cygnes in Paris widened that frame across kitchens where precision, restraint and ingredient handling were part of daily execution. The opening of the St. Regis Hotel with Connie DeSousa at St. Regis Hotel in San Francisco placed Jackson inside that kind of build, where a kitchen has to become functional under real pressure. The later Hokanson Chef in residence role at NAIT (2023) moved that experience into an instructional setting, with trade knowledge passed back to cooks in formation.
