In the East Coast run at Dinosaur Bar-B-Que (1983–1988), John Stage worked as a traveling pitmaster, a role that demands adaptability as much as consistency. Open-road barbecue leaves little room for fixed conditions; the cook has to read the fire, the crowd, and the day as they come. That experience carried directly into Syracuse, New York, where he became founder and owner of Dinosaur Bar-B-Que (1988–2014) and turned a mobile way of working into a fixed address. The next phase kept the same line moving, but with a different kind of responsibility. John Stage moved into an advisory role at Dinosaur Bar-B-Que (2014–2018), then returned as chef/owner of Dinosaur Bar-B-Que (since 2018). Across those changes, the continuity is the point: barbecue remained the center, with each title marking a different way of holding the same craft.

As chef/owner of Dinosaur Bar-B-Que (since 2018), John Stage remains tied to the restaurant that has carried his name through multiple phases of work. The role reflects a long practice of maintaining barbecue as both technique and operating identity, with Syracuse, New York still serving as the fixed ground for a career that began on the road.

Signature

John’s signature dishes include Grilled Mojo Skirt Steak and Dinosaur Bar-B-Que: An American Roadhouse. One is a direct read on grill work; the other points to the wider frame around his barbecue practice. Together, they show a cook working in both dish and institution, with fire, sauce, and place doing the heavy lifting.
