The Path
Service at The Coach & Horses in London, where Jon Hillgren started behind the bar in 1999, set the pace for the work that followed. The room demanded timing, repetition and control: pouring, stirring and reading a drink in motion. Those are bar skills, but they also form the basis of distilling, where balance depends on the same attention to detail and the same refusal to let small errors pass. Since 2011, Hillgren has been the founder and Master Distiller of Hernö Gin.
