The Path
Swedish wine service is built on repetition, recall, and standards you can hold against the glass. At Restauranghögskolan, Jonas Röjerman was trained for that work, then moved through sommelier posts at Mårten Trotzig in Stockholm, Ulla Winbladh in Stockholm, and Prinsen in Stockholm. Each role sits in the same discipline: service that depends on timing, cellar knowledge, and reading the room without overplaying the hand. Cellar stewardship came into focus at Vinkällaren Grappe, where Röjerman worked as vinkällarmästare until 2001.
