The Trajectory
Professional cookery training in the Netherlands and at sea formed the base: Groningen cooking school, Amsterdam cooking school, and Holland America Line. That schooling preceded the long Zwolle chapter in which Jonnie Boer served as head chef at De Librije from 1989–2025 and became co-owner from 1992–2025. The Zwolle work extended from restaurant craft into adjacent formats without leaving the same operating center. Boer was co-owner / operator at Librije's Winkel in Zwolle, Netherlands (2005–2025), founder at Food on Tour (from 2006), co-owner at Librije's Hotel in Zwolle, Netherlands (2008–2025), and co-owner at Librije's Atelier in Zwolle, Netherlands (2008–2025). “Quality, simplicity, taste, humor, stability.” Jonnie said.
The Current Work
Place was part of the method: Giethoorn as origin, Zwolle as the professional address, and the restaurant as the reference point for the cooking. The Holland America Line collaboration carried that reference outside the restaurant through the De Librije Pop-Up menu. Across the roles, the work remained identified with Dutch cooking and with the Zwolle kitchen.

Recognition tracked the development of De Librije and its related address, Librije's Zusje: First Michelin star for De Librije (1993), Second Michelin star for De Librije (1999), Third Michelin star for De Librije (2004), Michelin star for Librije's Zusje (2008), Two Michelin stars for Librije's Zusje (2011), and Restaurant of the Year for De Librije (2008).
