Jordan Clavaron was head chef at Society in Melbourne from 2021, then head chef at Cutler in Melbourne from 2021, followed by head chef at Cape Restaurant in Mornington Peninsula from 2022. By 2025, he had taken on head chef duties at Poodle Bar & Bistro in Melbourne, before becoming chef of Lucia Restaurant & Bar. The path runs through Melbourne, Mornington Peninsula and now Carmel Valley, but the through-line is consistent: controlled plates, exacting standards and room for a controlled interruption. That progression — Paris to London, then Melbourne and Mornington Peninsula, and on to Carmel Valley — reads less like reinvention than refinement.
