The Climb
Training at The Fat Duck and Bo Innovation gave Jordy Navarra a foundation built on exacting kitchens, tight standards, and attention to detail. Those rooms shaped technique, but they also shaped method: a way of working that values precision, restlessness, and the ability to make food say more than habit allows. That foundation set the terms for the rest of the work. At Toyo Eatery, where Jordy Navarra became chef-owner, the discipline of those early kitchens was turned into authorship. The result is a practice defined by clarity and curiosity, with dishes that read as composed, personal, and controlled without losing force.
Today
Manila, Philippines is the center of Jordy Navarra’s current work, with Toyo Eatery as the venue most closely attached to his name. In a city that asks for substance, the restaurant reflects a practice built over years of refinement: grounded, deliberate, and shaped by the lessons of earlier kitchens as they meet present-day context.
Signature
The signatures associated with Jordy Navarra point to a kitchen that works between recognition and reinterpretation. Bahay Kubo carries a name with immediate local resonance; Three-cut pork barbecue suggests a study in form and restraint; and Banana Catsup folds a familiar Filipino staple into a broader culinary register. Taken together, they show an approach that is not chasing novelty for its own sake, but using familiarity as material.
In Their Words “It was something every Filipino knew or understood.”
