In regional wine institutions, the job is as much about defining standards as it is about understanding how a place earns its identity. That experience sits behind his current work: a view of wine built on oversight, discipline, and respect for what the region can legitimately claim. Teaching and cellar work run in parallel in José Carlos Álvarez’s current practice. As Profesor de sumillería, he brings the same exacting standard to the classroom that he applies as executive and technical director of Bodegas Convento de Las Claras. The two roles reinforce each other: one transmits method, the other tests it against the needs of a property. In both, the aim is the same—draw out the fullest expression of each vineyard and work with that expression carefully.

In Their Words “We believe in its oenological potential, a unique variety representative of Ribera del Duero.” The line is direct and matter-of-fact, and that is the point. It frames wine as a question of place, variety, and what can be made legible through the winery’s decisions. In José Carlos Álvarez’s terms, potential is not abstract; it is tied to a specific landscape and to the discipline required to interpret it well. “All our work and effort is aimed at obtaining the maximum expression of each vineyard.” This is a working principle rather than a slogan. The vineyard is treated as singular, and the task is to let that singularity show through with as little distortion as possible.
