José del Castillo

José del Castillo is a Peruvian chef and the founder of Isolina Taberna Peruana in Barranco, Lima, which he opened in 2015 in homage to his mother, Isolina Vargas. He found his vocation in traditional Peruvian cuisine at age 28. He previously led La Red, the restaurant founded by his mother in 1981, and helped make it a reference point in Lima’s dining scene.
