Training came before restaurant identity. Josef Centeno’s background runs through San Antonio Academy, Central Catholic Marianist High School, and the Culinary Institute of America, a sequence that points to discipline, formal structure, and a steady build of technique. The Los Angeles kitchen circuit first put Centeno into motion at Lazy Ox Canteen, where he was chef from 2008.
