i. Biography
Josh Mummert is a Chicago-based chef who led the tasting menu program at Kumiko in the West Loop and was named the 2024 MICHELIN Guide Chicago Young Chef Award winner. He previously worked at One MICHELIN Star Elske before joining Kumiko, and later stepped back from the kitchen because of health complications related to Loeys-Dietz syndrome.
