Juan Camilo Liscano is the founder and chef of Palma in Miami’s Little Havana, where he leads a changing tasting-menu restaurant shaped by his Hispanic heritage and global kitchen experience. He has worked in World’s 50 Best and Michelin-starred restaurants across the United States and Europe before returning to his hometown of Miami to open Palma. He was named the 2025 MICHELIN Guide Florida Young Chef Award winner for Palma.
