Juan-Pablo Perez trained at Conalep before stepping into the kitchen at Camino Real Veracruz, where he worked as Line Cook from 2007–2011. Those years set the operating tempo: line pace, service pressure, and the need for each motion to be efficient. He then moved into leadership as Director Restaurant at Hotel Rúa (2011), taking on oversight and responsibility early. From there, he became Assistant Manager at CIM Comedores Industriales de México (2012–2014), widening his scope from a single station to the larger mechanics of kitchen and dining operations. The next chapter shifted again: he served as Assistant Manager at KFC (2014–2015), before returning to the line as Line Cook at The Ritz-Carlton Hotel Company, L.L.C. (2015–2016). That return to hands-on cooking points to a career that moved back and forth between management and craft, planning and execution. The work then moved deeper into high-end dining with Sous Chef posts at Ajax Tavern (2017–2022) and The Little Nell (2021–2022), years that speak to consistency under luxury-service demands. From there, he became Head Chef at Amangiri (2023–2024), a role that placed Juan-Pablo Perez at the center of a distinct culinary setting and brought his experience into fuller use. Today, Juan-Pablo is culinary kitchen manager of Hacienda Colorado (since 2025) and Senior Banquet Chef of The Ritz-Carlton Hotel Company, L.L.C. (since 2026), continuing a career shaped by range, endurance, and growing command of kitchen leadership.
