Juan Valdés García is the chef, maestro asador, and co-proprietor of Restaurante Asador La Castillería in Vejer de la Frontera, Cádiz. After cooking at the Pabellón de Cuba during Expo '92 in Seville, he established La Castillería in 1994, evolving it into a premier Spanish temple for dry-aged beef and wood-fire grilling. Under his leadership, the restaurant has earned a Sol Repsol and an ongoing recommendation in the Michelin Guide.
