Now chef-owner of Odette in Singapore, Julien Royer works within a French foundation shaped by Asian influence, using a seven-course tasting menu as the format for seasonal produce-led cooking.
The Climb
French technique and produce discipline frame the early formation here: Julien Royer built his craft at Restaurant Bras in Laguiole, France, then continued in a chef / culinary role at Bernard Andrieux in Durtol, Auvergne, France. The Singapore progression moved through hotel and dining-room precision: Chef de cuisine at Brasserie Les Saveurs, St Regis Hotel in Singapore (2008–2011), then Chef de cuisine at JAAN, Swissôtel The Stamford in Singapore (2011–2015). A contemporary French dining portfolio in Singapore and Hong Kong now carries that foundation through distinct rooms: Julien is chef-owner of Odette (since 2015), chef-owner of Louise (since 2019), and owner/operator of Claudine (since 2021).
