Since 1996, Kahraman Altun has kept Balıkçı Kahraman in Istanbul to one branch, one name, one line of work, building the restaurant around fish without spreading it thin. His own explanation is plain: “If someone else had this name, they would open 20 branches; we don't do that — it's one shop, one branch.” That restraint is not branding so much as a trade choice: depth over scale, repetition over expansion.

Where They Are Now

At Balıkçı Kahraman, the roles are kept compact: founder, owner, and chef. Kahraman Altun’s kitchen centers turbot, and the restaurant’s identity is shaped around that kind of focus — a menu that stays close to the sea and avoids unnecessary noise. Technique sits alongside taste in the work. “I invented the whole-fish cooked in embers and tandoor method in Turkey,” Altun says, naming a method built on fire, smoke, and time rather than decoration. Singularity is the operating principle here. Kahraman Altun does not present Balıkçı Kahraman as a concept to be replicated, but as a fixed point in Istanbul, defined by consistency and by a disciplined approach to fish. The restaurant and the name are tied together by design, and the result is a kitchen with a clear contour: one place, one practice, no excess.

Signature

Kahraman's signature dishes include kalkan, lakerda, mısır ekmeği, domates salatası, and Peynir & Lakerda. Read together, they show a kitchen working in a tight register: kalkan and lakerda keeping the emphasis on fish; mısır ekmeği and domates salatası bringing in straightforward support; Peynir & Lakerda landing as a pairing that is spare, specific, and deliberate.
