At The Savoy (American Bar) in London, United Kingdom (from 2012), she worked as server; at Corner Club in Stockholm, Sweden, she worked first as bartender and then as bar manager; and at Blue Bar at The Berkeley Hotel in London, United Kingdom (from 2021), she served as assistant bar manager. Today, Wilkes works as Brand Consultant of self-employed.

Brand consultancy is where bar-floor experience gets translated into language, positioning, and guest understanding, and Wilkes uses that shift without leaving service thinking behind.
