The Climb
Guillou’s work has been shaped by measured progression: a management career built through continuity, room-reading, and control of service rather than display. Trained at Institut Pilatre des Roziers, Moulins-lès-Metz, Katell Guillou moved into responsibility early and held it steadily, with roles that put her in direct contact with the daily mechanics of a dining room. From 1990 to 2000, as gérante of Boutique traiteur du restaurant Saint-Michel in Luxembourg City, she was working in the practical core of hospitality—organization, timing, and the discipline that keeps service clean. In 1999, she also became gérante of Toit pour Toi in Schouweiler, Luxembourg, a post she held until 2018. Since 2009, she has been gérante of Guillou Campagne in Schouweiler, Luxembourg. The overlap of those years is the point: the craft here is not about one title at a time, but about sustaining several responsibilities with the same steadiness.
Today
At Guillou Campagne, the cuisine is Traditional Luxembourg terroir cuisine served in a warm, refined setting. The house matters to the experience. The building’s history is not separate from the dining room; it frames the work and gives the place its continuity. The flagship dishes point to a kitchen working with tradition in a controlled register: fleurs de courgettes farcies au homard et gambas, and vol au vent au poulet de Challans. Taken together, they show a line that runs between rootedness and finish, with enough restraint to let the format speak for itself.
