The Path
At École hôtelière in Thonon-les-Bains, Kelly Jolivet learned the base habits that professional kitchens demand: discipline, repetition, and attention to detail. From there, her work moved through houses where precision is part of the standard. As intern at Louis XV in Monaco, she worked in a service culture where each gesture carries weight. Returning to Louis XV in Monaco as Chef de partie, she took on greater line responsibility and tightened the exactness that would later define her cooking. That discipline was then tested outside the Riviera, when Kelly Jolivet became sous-chef at miX in Dubai (from 2018). The role required pace, composure, and control across service. In Paris, she continued that progression first as chef at Ducasse sur Seine in Paris (from 2019), then as head chef at Benoit in Paris (from 2022). The movement across kitchens shows a career built by accumulation: technique reinforced over time, and standards carried from one house to the next.
The Work Today
