Kenneth Maverick’s work starts in the backyard: a practical testing ground where weekends went to family, friends, and the mechanics of making. By 2025, that hands-on curiosity had become founder’s responsibility at Maverick Distilling in San Antonio, where grain, water, yeast, and patience are turned into whiskey and other spirits on-site in a small, family-run operation.
Early Years
The first phase was less about branding than repetition, observation, and a scientific habit of asking what happens next. “My scientific background and interest in the process started as a weekend project in the backyard involving family and friends.” The memory also shows the scale of the experiments: domestic, improvised, and just unruly enough to announce themselves in the middle of the night. “Allegedly…(to protect the innocent), some large fermentation bottles may have not been venting properly, that caused a loud hissing noise in the middle of the night waking my wife Amy and me.” What comes through is method under pressure: process checked by hand, in real time, with the people closest to him nearby. That early trial-and-error became the basis for the work that followed, moving from backyard tinkering toward spirits made from locally sourced grain at a family-run operation in San Antonio.
Making a Name
At the distillery, the craft is defined by specificity. Maverick Distilling produces whiskey and other spirits, including grain-to-glass expressions, made with exclusively Texas grains and distilled entirely on-site. The result keeps raw material, equipment, and finished spirit tied to one place. Family history is part of that setting, not just its backdrop. “Having Maverick Distilling located on the original Maverick Family Homestead of Sam and Mary Maverick instills a unique spirit into our spirits.” The releases make that approach legible. Samuel Maverick Straight Triticale Whiskey Bottled-In-Bond is an extremely limited release made from triticale, the hybrid grain of wheat and rye. Samuel Maverick Barrel Proof Bourbon is a limited-edition bourbon associated with the distillery. Together, they point to a maker focused on grain, proof, process, and the discipline of small-batch production rather than scale for its own sake.
