Today

Clarity, ease, and seasonal structure sit at the center of the service at Bar Les Ambassadeurs. The menu is meant to settle the room quickly, giving guests a direct entry point into the bar rather than asking them to decode it. Kevin Rigault has made that approach explicit: the experience should feel immediate and immersive, while still meeting the standards attached to the setting. Seasonal thinking gives the bar its internal logic, with ingredients presented at their peak and the menu built to show that peak without excess.

Signature

Kevin's signature dishes include Lemon Thyme, Seaside, Flames, Funfair, and The Atlas Martini. The list moves between bright, direct naming and more theatrical cues, with The Atlas Martini providing a fixed point of classic form among the more suggestive entries.
