Grain selection is the first technical decision in this noodle work, not a procurement footnote. In Kunio Yoshikawa’s practice, farmers across Japan supply varieties that are handled as distinct raw materials, each carrying differences shaped by land, season, weather, care, and time. The craft does not treat grain as a neutral base for standardization; it begins by preserving what the crop already indicates. Milling and kneading carry that agricultural difference into the dough. In Yoshikawa’s hands, these steps are adjusted to the variety rather than imposed as a fixed routine. Texture, aroma, elasticity, and dough feel become the working measures, linking farmer, ingredient, and maker through decisions made at the bench. The noodle is built to show variation rather than erase it. Yoshikawa’s aim is to keep each variety legible at the table: one expression may read as delicate, another as firm; one may carry deeper grain character, another a gentler fragrance.
