The Path
The discipline of front-of-house operations shows up early in Larry Delgado’s work. As managing partner at Carrabba’s Italian Grill in Austin, Texas, he took on the kind of steady, demanding role that sets pace, standards, and service habits for everything that follows. By 2014, representing Texas at the Great American Seafood Cook-off in New Orleans, Louisiana, he had already extended that foundation into a broader competition setting, where regional identity and technical range sit side by side. The line through that period is clear: rooted in place, but open enough to absorb more than one tradition. A multi-concept portfolio requires a different kind of consistency. Since 2008, House Wine & Bistro has been part of Larry Delgado’s business, followed by SALT – New American Table in 2013 and Salomé on Main in 2019, alongside his roles as chef and owner of The Delgado Collective and chef of House Wine & Bistro. The throughline is not sameness but authorship: each room has its own brief, but the work behind them points to one hand shaping scale, mood, and menu direction.
The Work Today
In McAllen, the work is spread across several kitchens and dining rooms, and Larry Delgado handles that range with a compact, controlled presence. As chef and owner of The Delgado Collective, and chef at House Wine & Bistro, he is not building toward novelty for its own sake. The emphasis is on refinement: tightening what already works, keeping the plate legible, and letting accumulated experience do the organizing. That approach gives the cooking a clear structure.
