i. Biography
Lauren Mote became cocktailian at Diageo in 2017. Her drink-making range was already visible in the Earl Grey Martini at Chow Restaurant in 2008. Her own framing of the work is plain: “The most important thing to me is being able to translate quality as well as history to each guest, in every aspect of the business.”
The Path
Early in their career, Lauren worked as mixologist at Uva (from 2013) and cocktailian at Diageo (from 2017).
The Work Today
Her signature cocktails show how exacting that approach can be. At The Refinery in 2017, she created the Charred Bourbon Sour, a $14 drink built from components made daily, including Charred American Oak & Caramelized Coconut Syrup and House Bitters. At Chow Restaurant in 2008, she made the Earl Grey Martini with Tanqueray Gin infused with earl grey tea leaves, then shaken with lemon juice, organic cane sugar syrup, and an egg white.
