The Climb
The line from line cook to ownership is usually built on repetitions, and Lee Cooper’s run shows that clearly: sous chef at Mission Hill Winery, apprentice under Rob Butters at Fresco in Kelowna, Chef de partie at The Fat Duck, sous chef at The Pear Tree, then opening sous chef at Shangri-La's Market by Jean Georges. Each stop added a different kind of pressure — scale, intimacy, precision, and the demands of helping open a room — before he settled into the long role that has defined him. Since 2010, L'Abattoir has been his seat as owner and Executive Chef. That kind of continuity matters in this trade. Over time, the restaurant and Cooper became linked not by branding but by repetition, years of service, and the accumulation of decisions that give a kitchen its shape.
Today
Restaurant identity can be easy to flatten into category, but L'Abattoir resists that. Cooper’s own description keeps the emphasis where it belongs: on the work of making a room legible through food rather than through label. “I still struggle to even describe what our restaurant is. It’s got a French name… but it’s not really French.” The ambiguity is part of the format: disciplined, polished, and not interested in over-explaining itself.
Signature
The signature dishes sit in a lane between technique and restraint. Tart of pomme boulangère, oxtail, truffles layers richness in a way that suggests careful construction rather than excess. Steak tartare, shiso, bluefin otoro, oyster leans on contrast: saline depth, herb lift, and clean precision in one plate. Aged acquerello rice, dashi, uni is built on quiet richness, while Smoked sablefish keeps the smoke controlled enough that the fish stays centered. Roast lamb, celeriac, bagna cauda, natural jus reads grounded and savory, and Salted honey cake, toasted oat, earl grey tea closes on texture and measured sweetness.
