i. Biography
Lior Lev Sercarz founded and owns La Boîte in New York, New York, a role he has held since 2006. Born and raised in Israel, he came up as a chef at Daniel in New York City before making spice blends the center of his work. That background shows in the structure of the practice: restaurant discipline, then a narrower focus on blending, with aroma, heat, and depth treated as primary tools rather than afterthoughts. At La Boîte, spice is handled as a working vocabulary. A few measured turns can shift the whole read of a dish, and since 2006 Sercarz has kept that idea at the center of the business.
The Essentials Spice blends define his work. At La Boîte, he has led the business since 2006 as founder and owner. The method comes out of a chef’s discipline, with Daniel in New York City as part of the record and Israel as the wider point of reference, but the output is its own category: blends built through memory, technique, and a broad culinary vocabulary. The work is exacting without being rigid. Each blend carries a distinct register of flavor, and each name is built to signal its intent. In that way, the spice cabinet functions as a repertoire, with La Boîte organized around composition as much as trade.
Signature
Lior's signature dishes include Cancale, Pierre Poivre, Za'atar, Izak, and Shawarma Seasoning. Taken together, these names map the range of the work: Cancale and Pierre Poivre alongside Za'atar, Izak, and Shawarma Seasoning, each one pointing to a different register of spice and use. The set reads as chef-driven and tradition-aware, but the emphasis stays on construction rather than ornament. For Sercarz, the point is to build flavor with intention, layer by layer, blend by blend, until the result lands with clarity.
