The Path
Louis Osteen’s training moved through University of Carolina and Clemson University before the work settled into a sequence of Southern dining rooms, each one adding another layer to his practice. He was chef at Le Versailles in Atlanta from 1973, then owner at Harts in Atlanta (Buckhead) from 1976, where the shift from cook to operator marked an early expansion of responsibility without leaving the kitchen behind. The coast became the central reference point in 1979, when Osteen took on chef and co-owner at Pawleys Island Inn restaurant in Pawleys Island, South Carolina. That move brought the menu closer to tidewater ingredients and Lowcountry traditions, and the rest of his career follows that line with steady consistency: chef at Charleston Grill in Charleston, South Carolina, followed by chef at Louis' in Charleston, South Carolina, then chef at Louis's Fish Camp in Pawley’s Island, South Carolina, and chef at Louis's of Sanford. Since 2001, he has been chef and co-owner of Louis's at Pawley’s, keeping the work tied to the same stretch of coast that has long shaped his cooking.
