Lukas Lacina is chef of MAST Weinbistro in Vienna, where the work reads as control earned the hard way: measured, exact, and built on the habits of kitchens that leave little room for drift.
The Climb
Early in his career, Lukas Lacina moved through some of the sharpest kitchens in the region, building fluency step by step in places where standards are exacting and the margin for error vanishes quickly. First as apprentice at Steirereck, then as chef at Obergurgl, Austria, before continuing as chef at Andreas Döllerer and chef at Tian, he gathered experience in a sequence that now reads like a practical education in craft. Each stage added another layer: the discipline of apprenticeship, the pace of professional service, the pressure of refinement, and the judgment needed to hold all of it together. At MAST Weinbistro (since 2017), that progression has settled into a style that is calm rather than showy. The room is shaped by wine and seasonality, and the cooking follows suit: precise, steady, and attentive to timing. Lukas Lacina’s work carries the marks of kitchens that demand accuracy, but also the restraint to know when to stop. At MAST Weinbistro (since 2017), Lukas Lacina works in the space between technical control and relaxed composure. As chef and Head Chef, the job is not only to direct a kitchen, but to keep the pace even, protect clarity on the plate, and hold the mood of the room.
